1, Formulation and preparation of preservatives:
Main ingredients of the preservative: sodium benzoate, potassium sorbate.
Sodium benzoate is mostly white granules, odorless or slightly with a restful aroma, slightly sweet and convergent; Easily soluble in water about 53.0g/100ml, PH about 8;
Sodium benzoate is also an acid preservative, which has no bactericidal and bacteriostatic effects in alkaline medium; The best PH for anticorrosion is 2.5-4.0, and the bactericidal effect of 5% solution at PH 5.0 is not very good.

Sorbic acid and potassium sorbate
Sorbic acid, also known as sorbic acid, is colorless needle shaped or white powder shaped crystal, odorless or slightly pungent, light resistant and heat-resistant, but it is easy to be oxidized and discolored after being placed in the air for a long time, and the anti-corrosion effect is also reduced. Sorbic acid is insoluble in water and soluble in organic solvents such as ethanol. Potassium sorbate is very soluble in water, also soluble in high concentration sucrose and salt solution, so it is widely used in production.
Sorbic acid is an unsaturated fatty acid, which can participate in normal metabolic activities in the human body and finally be oxidized into carbon dioxide and water, so it is internationally recognized as a harmless food preservative. The ADI of sorbic acid is 0~0.25mg/kg (FAO/WHO, 1994).
Sorbic acid and potassium sorbate are acid type preservatives, which play a bacteriostatic role with undissociated molecules. Their antiseptic effect increases with the decrease of PH, but the appropriate PH range is wider than benzoic acid. It is not appropriate to use them in the medium with PH<6.
When using sorbic acid, it should be dissolved in a small amount of ethanol or sodium bicarbonate, potassium bicarbonate solution, and then added to food. In order to prevent sorbic acid from volatilizing when heated, it is best to add sorbic acid at the later stage of food heating process. Potassium sorbate is easily soluble in water and easy to use, but the PH of its 1% aqueous solution is 7~8, which tends to increase the PH of food and should be noted.
